honeysuckle honey crystallises a few months
after the harvest. It is very light in
colour, almost white. It has a mild
fragrance and a delicate taste with an
agreable vegetable note.
Because of its delicate flavour, this honey
is widely appreciated and can be used for
anything.
The first references about this plant date
back to 1600: of Spanish origin, it was used
as an ornamental plant, perhaps due to the
intense perfume that its carmine flowers
give off. Nowadays it is cultivated as
forage, especially in regions with heavy
soil. It grows spontaneously practically
anywhere and colonizes clay and subsaline
soils.
